The flavour everyone thinks they know

Of all flavours, vanilla is the only one that also turned into a word for dull.

Ours is Bourbon vanilla from Madagascar. Bourbon is not a brand but a variety, named after Île Bourbon — the island now called Réunion.

You recognise it by what it leaves behind. Not sweet but warm and faintly woody, with the black specks you see because the pod was actually in there.

All year at our atelier in Antwerp. Contains milk.
