A quieter green

Colour is the cheapest thing in an ice cream shop. One drop and the photograph works.

Our pistachio comes from Iran and keeps the colour the nut arrives with: muted, close to grey. Anyone expecting bright looks twice.

The rest happens on the tongue. Salt at the edge, fat through the middle, and a bitterness that only rises afterwards and then stays.

On the counter all year at our atelier in Antwerp. Contains milk and nuts.
